The blend of Earl Grey Tea is named after the 2nd Earl Grey, who reputedly received a gift of tea flavoured with bergamot oil. The legend usually involves a grateful Chinese mandarin whose son was rescued from drowning by one of Lord Grey's men, although this blend of tea was first made from fermented black "Ceylonese" (Sri Lankan) teas. A few corrections are in order Firstly, the Chinese have never been black tea drinkers, and were unlikely to have a recipe for Earl Grey to bestow on visitors. Secondly, Charles Earl Grey never set foot in China. Otherwise, the story is completely true.

Hot Tea Brewing Method

• Use Filtered water or spring water that is not too heavy
• Boil one cup of water (212 Fahrenheit) in a clean pot
• Add one table spoon of Loose leaf Black Tea and steep for five minutes
